Curried Wheatberry Salad

This recipe contains Wheatberries, which are what flour is made from, and are considered a whole grain. As with all whole grains, they are a great source of B vitamins.

Serves 4
1 cup wheatberries
1 apple peeled, cored and chopped finely
1 red bell pepper diced
1 small field cucumber peeled and cubed into small pieces
1/3 cup of slivered almonds
1/3 cup of raisins
3 Tablespoons olive oil
6 teaspoons apple cider vinegar
3 Tablespoons of honey
1 Tablespoon of curry powder

- Soak wheatberries overnight in water
- Bring to a boil and boil vigorously for 2 minutes, then let simmer gently for 30 minutes
- In a large bowl, mix together oil, vinegar, honey and curry powder
- Add cooled wheatberries to bowl
- Add in apple, cucumber, nuts and raisins
- Combine and serve
