Almonds and other nuts and seeds are more easily digestible if soaked overnight with a bit of salt. This soaking breaks down the anti-digestive enzyme coating and allows your body optimal absorption of the vitamins found in the nuts and seeds. Nuts and seeds contain small amounts of phytic acid, which is an anti-digestive enzyme found in the skin of the nut or seed. These enzymes are there because it prevents the seeds and nuts from sprouting prematurely in nature, and also encourages nut-loving animals like squirrels to get a variety of food in their diet.
The little bit of salt helps de-activate the enzyme inhibitors. This is actually an ancient, ancestral method that was used by people in Central America. They first soaked nuts and seeds in seawater before dehydrating them.
Your stomach acids are concentrated after your nightly sleep and are efficient at absorbing the easily digestible plant-based proteins found in nuts. This protein in the morning helps stabilize your blood sugar for the rest of the day.
Almonds also contain Vitamin E, magnesium, potassium and monounsaturated fat which is a good fat that helps lower cholesterol.
*1 handful raw almonds
*half handful raw seeds (sunflower or pumpkin)
*half handful dried berries (cranberries, raisins or goji berries)
- Soak almonds and seeds together in a bowl of water with a pinch of salt overnight. The water should be at least double the amount of nuts and seeds. Cover with a plate or cloth.
- Soak the berries in a separate bowl with just enough water to cover them. Cover with a plate or cloth.
- In the morning, drain and rinse the nuts and seeds. Place them in a blender with berries, including the berry water.
- Blend to a smooth, creamy consistency. You can add more water or natural fruit juice if needed to enhance blending. Scrape the nutty goodness into a bowl.
Add your favourite, in-season fruit and enjoy!
For a super boost, add flax or hemps seeds.

Since September 2007, The United States Department of Agriculture require all almonds that are labeled ‘raw’ to be steam pasteurized or chemically treated with propylene oxide due to cases of Salmonella traced to almonds in 2001, 2004, and 2006. According to The United States Food and Drug Administration, propylene oxide is a probable human carcinogen. Nuts imported from places other than the US do not have this treatment requirement.
