Cyndi O'Meara Lunch

A quick and easy lunch that utilizes your leftover meats in the most delicious way! Using simple ingredients and incredibly tasty condiments, leftovers have never tasted so good!

Serves: 2-3


Ingredients

(use organic ingredients where possible)

  • 2-3 slices of leftover meat or cold cuts of your choice
  • 1 cup mixed lettuce
  • 5 cherry tomatoes
  • 1 sweet potato, roasted and cooled
  • 3-4 florets of broccolini, steamed and cooled

Directions

  1. Combine all ingredients into a salad.
  2. Add 1 or 2 tablespoons of each of pesto and mayonnaise to dress.

PESTO

Ingredients

(use organic ingredients where possible)

  • 1 bunch basil
  • 100g walnuts
  • 50g parmesan, freshly grated
  • 1 tsp apple cider vinegar
  • 5 tbsp Changing Habits Inca Inchi Oil (or cold-pressed olive oil)
  • 1 pinch Changing Habits Seaweed Salt (or sea salt)
  • Freshly ground black pepper

Directions

  1. Place all ingredients into the Thermomix.
  2. Mix until combined to the consistency you prefer.  

MAYONNAISE

Ingredients

(use organic ingredients where possible)

  • 1 clove garlic
  • 250ml or 8 oz Changing Habits Inca Inchi Oil (or cold-pressed olive oil)
  • 1/2 a lemon, juiced
  • 1 tsp apple cider vinegar
  • 2 egg yolks (eggs must be at room temperature)
  • Sea salt

Directions

  1. Place egg yolks, apple cider vinegar, lemon juice, garlic, salt, and pepper in Thermomix and mix until combined.
  2. Slowly pour oil onto the lid of the Thermomix to dispense oil slowly into the mix while the machine is running.
  3. Once all the oil has been added, increase the speed of the machine until completely mixed and has a thick consistency. 

NOTE*

If you don't have a Thermomix, you can use a blender or food processor.
