Chocolate Mousse Parfait

Cacao boosts brain levels of serotonin, the feel-good brain chemical. When women are experiencing PMS serotonin levels drop dramatically. The benefits of cacao are proven to boost the brain levels of calming hormones and restore feelings of well-being.

(use organic where possible)


  • ½ cup water
  • 2 cups cashews, soaked
  • 1 cup agave syrup
  • ½ cup vanilla extract or 1 vanilla bean


  • ½ cup water
  • 2 avocados
  • 1 cup agave nectar
  • 1 cup rapadura
  • 2 cups raw cacao powder
  • Vanilla extract or vanilla bean
  • Cinnamon to taste
  • Strawberries, sliced, to serve


  1. Combine all vanilla cream ingredients in a blender and blend until smooth. Set aside to thicken.
  2. Place avocados into the blender, along with agave nectar, rapadura, cacao powder, vanilla, and cinnamon. Blend on low, and increase speed to gain a thick consistency.
  3. In  a dessert dish or glass, layer the vanilla cream, strawberries, and chocolate mousse. Enjoy!
