Marinated Tempeh Skewers

Marinated in a delicious sauce and cooked on the BBQ - this is the way to have tempeh.
Serves: 3-4
Ingredients
(use organic ingredients where possible)
FOR THE DRESSING
- 2 tbsp tamari
- 1 tsp ginger, grated
- 1 tbsp maple syrup
- 2 tbsp tamari
- 1 tbsp water
- ½ garlic clove, grated
- 1 packet tempeh
- Coconut oil
FOR THE SALAD
- 1 cup purple cabbage, thinly sliced
- Handful coriander leaves
- 1 carrot, cut julienne
- 2 spring onions, finely sliced
- 1 chili, sliced
- 1 lime wedge, juiced
- Salt, to taste
- Black Pepper, to taste
Directions
- To prepare the tempeh skewers, whisk all the dressing ingredients together.
- Add the diced tempeh and stir to coat with the dressing.
- Add coconut oil to a pan or BBQ plate and heat on medium-high.
- Arrange the marinated tempeh in the pan and cook until brown on each side.
- Remove and thread on skewers.
- To prepare the salad, mix the veggies and herbs and drizzle with the lime juice, season with salt and pepper and serve with the skewers.
