Nut Butter Chocolate Fudge

Next time you're craving chocolate, try making your own using our favorite chocolate recipe. The combination of healthy fats from the coconut oil and nut butter will leave you feeling satiated while offering your body a whole host of health benefits.

You can mix up your chocolate to include whatever ingredients you have on hand. We love things like goji berries, shredded coconut, nuts, seeds, and chia seeds. The choice is yours!

Why it's so good for you:

Raw cacao powder has more than 300 phytochemicals and nearly four times the antioxidant power of regular dark chocolate and contains protein, calcium, carotene, thiamine, riboflavin, magnesium and sulfur.

Nut butters are a great way to add more healthy fats, protein, and fiber into your diet which are essential for nerve function, stabilizing blood sugar levels, healthy hormone production and protecting our cells.


Ingredients

(use organic where possible)

  • ½ cup melted coconut oil
  • 1 tsp vanilla extract
  • ¼ cup 100% pure maple syrup
  • ½ cup raw cacao powder
  • ¼ cup nut butter
  •  ½ cup raspberries (optional)
  • 3 tbsp activated buckwheat, quinoa puffs or oats (optional)

Directions

  1. Whisk together cacao, maple syrup, melted coconut oil, and vanilla in a mixing bowl until well combined.
  2. Next, add in your nut butter.
  3. Mix through raspberries and buckwheat groats/quinoa puffs, if using.
  4. Pour chocolate mixture into a lined tray or freezer-safe container.
  5. Place in the freezer for 30 minutes or until set.
  6. Remove from freezer and cut or break into pieces to enjoy.

Note*

  • You can use peanut butter, cashew butter or almond butter, whichever you prefer. Make sure this is mixed well before pouring into a lined freezer-safe dish.
