Quick Raspberry Crumble

This is one of our all time favorite go-to desserts! It's so quick to whip whenever needed as we usually have these ingredients in our freezer or pantry. There's nothing fancy about it but the flavors are amazing!

Berries are the perfect healthy treat to satisfy your sweet tooth. They are rich in vitamins, antioxidants, and fiber. They contain one of the highest concentrations of antioxidants of any fruit on earth.


BERRY MIXTURE

Ingredients

(use organic where possible)

  • 1 cup mixed frozen or fresh berries
  • 1 tsp vanilla extract

CRUMBLE

Ingredients

(use organic where possible)

  • ½ cup macadamias, roughly chopped
  • ½ cup shredded coconut
  • 3 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Directions

  1. Preheat the oven to 350°F (180°C).
  2. In a small saucepan over medium heat, heat the berries and vanilla.
  3. Let this simmer while stirring until the berries begin to break down.
  4. Pour berry mixture into 2 small ramekins.
  5. Mix the macadamias, coconut, vanilla extract, cinnamon, coconut oil and maple syrup.
  6. Pour the crumble filling evenly over the berry mixture.
  7. Place into the preheated oven and bake for 20-30 minutes.
  8. They are done when the fruit juices are bubbling around the edges and the crumble is firm and browned.
