Ingredients

- 1 ½ cups raw red rice
- 2 cups water
- ¼ cup goji berries
- 1 long green chili, finely sliced
- 3 spring onions, finely sliced
- 1 carrot, finely diced
- 1 red capsicum, finely diced
- 1 cucumber, finely diced
- 1 bunch of parsley, roughly chopped
- Salt and pepper
DRESSING
Ingredients

- ¼ cup soy sauce or tamari
- 2 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1 tbsp sesame oil
- Salt and pepper
- ¼ cup sunflower seeds (topping)
- ¼ cup pumpkin seeds (topping)
