A really filling version of a fattoush!

Ingredients

(use organic ingredients where possible)

SALAD

  • ½ yellow capsicum, large dice
  • ½ green capsicum, large dice
  • 8 cherry tomatoes, cut into halves
  • ½ long red chili, chopped roughly
  • ½ bunch parsley, chopped roughly
  • ½ zucchini, cut into bite-sized pieces
  • ½ cup basil leaves
  • 1 slice essene bread, ripped into bite-sized pieces

DRESSING

  • 1 tbsp apple cider vinegar
  • 1½ tsp udo's oil
  • 1½ tsp maple syrup
  • Salt and pepper

Directions

  1. Mix the salad dressing well in a bowl and drizzle over your salad.
  2. Season well with salt and pepper.
