Simple Sauerkraut


(use organic ingredients where possible)

  • 2 medium cabbages, red or green, or one of each (approx. 2.5 - 3 lbs)
  • 3 tbsp sea salt
  • 2 tbsp caraway seeds (optional)
  • Veggie starter culture or 1 tbsp rapadura (unrefined cane sugar) or raw honey
