Corn Salsa

Corn salsa and guacamole made with simple ingredients! Corn is loaded with flavonoids (which, among other things, protect against lung and oral cancers), antioxidants (such as beta-carotenes), and lutein.

CORN SALSA

Ingredients

(use organic ingredients where possible)

  • 1 fresh raw corn on the cob
  • 1 tomato, diced finely
  • a slice of red onion
  • 1 red capsicum, diced finely
  • ¼ cup fresh coriander, chopped roughly
  • ¼ tsp cumin
  • Fresh lime, squeezed
  • Salt and pepper
  • Chopped fresh chili (optional)

Directions

  1. Remove the kernels from the cob and place in the bowl.
  2. Add the rest of the salsa ingredients.
  3. Season with salt and pepper and a good squeeze of lime.

GUACAMOLE

Ingredients

(use organic ingredients where possible)

  • ½ avocado
  • 2 slices cucumber, diced finely
  • Salt and pepper
  • Flax crackers (optional)

Directions

  1. In a bowl mash the avocado.
  2. Add the cucumber, season well with salt and pepper.
  3. Place it on a plate with the salsa.
  4. Add flax crackers for more flavor.
