There's nothing better than having a creamy and luxurious pasta sauce!

Why it's so good for you:

As an outstanding source of manganese and vitamin C, zucchini is the best source of dietary fiber that will keep your body in the best shape for the long run. It also contains vitamin A, magnesium, folate, potassium, copper, and phosphorus.


Ingredients

(use organic ingredients where possible)

PASTA

  • 1 zucchini, cut into strips to look like pasta, or use a spiralizer
  • ½ bunch parsley, chopped roughly
  • 2 spring onions, sliced thinly
  • Salt and pepper

DRESSING

  • ½ cup cashews, soaked overnight and rinsed well
  • ½ lemon, juiced
  • 1 tbsp apple cider vinegar
  • 1 garlic clove
  • ¼ tsp Dijon mustard
  • ⅓ cup water
  • Salt and pepper

Directions

  1. Add all the pasta ingredients to a bowl.
  2. Mix well; set aside and make the dressing.
  3. Combine all the dressing ingredients into a Vitamix or a high-speed blender.
  4. Blend well until creamy and smooth.
  5. Add to your pasta, toss well, and serve with a lovely salad.
