Bitter Melon is said to be the bitterest tasting of all vegetables. Traditionally, bitter melon was used to fight infection, diabetes, and psoriasis. A member of the gourd family, this herb is also said to help control blood sugar and contains some anti-fungal properties. Over 32 active constituents have been identified in bitter melon, such as vitamin C, vitamins B1 and B3, potassium, calcium, and beta carotene.
Cashews have a low glycemic index (22), so they affect blood sugar gently and will not trigger a rapid insulin response.
